晶華酒店晶華軒前陣子改裝,並延攬了曾任職於港澳各大餐飲集團(包括利苑)的兩位主廚,有明顯的摘星意圖,剛好看完吃家網友的分享後,我家那位可同行就來吃了,挺不錯的一餐(擺盤比較樸素),而服務則算是ok吧,隨時可叫得到人但無緊迫盯人的壓力,座位舒適度也可以。入口到餐廳這段的造景特別,有一塊區域很像..洗臉盆?茶選了貴妃烏龍,帶了些許蜜香好喝,兩個人吃,就算好要點哪幾道菜和點心,先不吃佔胃的麵飯主食類,燒味自然要試試,點叉燒燒肉雙拼,叉燒梅頭肉肉質細嫩,即便是較瘦的一端口感也都不錯,當然還是肥一點好,燶邊的微微焦香與調配的蜜度可謂恰到好處,燒肉就是細緻度差了些,兩樣燒味以叉燒較佳(總覺得還可更突顯特色),以價位來看不一定要特別點。(偏肥的這一端更好吃)(燒肉口感細緻度差了點,不算厲害)鮮菌千絲繡球這道歸類在素菜,一上桌香氣就飄飄飄~過來,乃是炸過的麵筋袋子,以滋味濃厚的冬菇木耳等細絲填充,芡汁帶入之後還蠻有層次~可點。脆皮吊燒雞(半隻)令人感到驚艷的火候,色澤油亮、咬了喀喀香脆勻稱的皮,就連雞胸都甘甜多汁毫無澀度,且刀工平整完好(想到上次在台中的...),侍者表示用的是玉米雞,以淮鹽醃過(味道

就連雞胸都甘甜多汁毫無澀度,且刀工平整完好(想到上次在台中的...),

侍者表示用的是玉米雞,以淮鹽醃過(味道有,但不重),

還和我說了個小事件,先前一位香港吃家獨自前來就點了半隻脆皮雞,

品鑑菜餚水平吧,後來是挺滿意的,嗯~這很像我等饕客真沒食伴時會做的事,

若被誤會成單身狗、邊緣人,那就傷腦筋惹。(可憐哪~)

XO醬香檳茸炒帶子,用的是澳洲帶子,個頭不大但是軟糯甘鮮,

香檳茸很香、蘆筍也很甜...

港點就是中午才有,韭菜金網煎鍋貼標了主廚推薦的mark,

冰花煎得好看,會噴汁得要小心吃(一咬就往外噴射!),

打到很滑的內餡、韭香充分,畢竟是有精緻度的點心,

輕易可勝過市面不少煎餃鍋貼店的水準。

紅裳脆皮蝦腸粉,這不錯,加了紅麴的米漿皮比一般腸粉皮要厚些、有彈性不爛糊,

類似的點心好像在一些粵菜餐廳都會有(單就蝦餡個人特別中意名人坊),

這紅裳腸粉則是整體口感協調,米網與蝦餡之間夾著的西芹香氣有著點睛效果。

蘿蔔絲餅用較粗的絲餡,綿密、仍帶少許咕溜感,還放入了火腿絲,

餡料又甜又鮮沒有苦味(比喆園好吃不少),尤其餅身無過重的油酥膩味。

甜點選了乾清棗皇糕,這好像是利苑的招牌,溫熱而彈性十足,

棗味濃郁好吃,中間那層有點像是椰奶風味(?)的QQ糕。
