從初訪至今終於有機會一嚐甲魚宴,毫無疑問是我吃過最棒的一次初梅,強項都發揮得很好,而且這次居然吃到母甲魚,應是脂肪層的緣故,湯頭肥腴味美,聽吉田桑說遇到母的機率很低(大約5%?),這次用了兩公一母,丸鍋、雜炊、茶碗蒸、甲魚唐揚、內臟的有馬煮,道道精彩~(八寸: 海苔炸毛豆、茄子荷蘭煮+烏魚子粉、江戶前玉子燒、酒粕漬白蝦、高湯栗子地瓜南京旨煮、牛蒡利休燒、柚子杏鮑菇水菜、烏賊塩辛,酒餚還是一樣討喜,特愛茄子😇)(開場喝個20年熟成以燒酎為底的丸酒,整個人活蹦亂跳~咦?)(造身: 龍蝦、宮城金華鯖、青森鮪中腹、紅喉、真鯛、干貝、鰆、烤白鮑、赤身薑汁醬油漬、"微蒸"根室無添加海膽、漬鮭魚卵蘿蔔泥)(丸鍋🐢)😋(炸甲魚肉、心肝膘的有馬煮,相當乾淨無任何不好的臟器味)(甲魚茶碗蒸)(炸狼牙鱔、紅魽、銀杏,以及佃煮昆布,這天炸物是ok的)(子持香魚煮+山藥泥)(土鍋煮白飯,先單吃,再煮雜炊)(丸鍋雜炊含甲魚蛋,"燈籠"概念)(澳洲黑鮑魚燉煮)(這次為了好友慶生我只好再次下廚滷豬腳,感謝各位朋友捧場😌)(自製豬腳原貌)👻(杏桃羊羹/紅豆銅鑼燒/麝香葡萄大福)
