教父牛排館是頂級的牛排餐廳,老板是有牛排教父之稱的鄧有癸先生,在大直總共有3間牛排餐廳。這一間是主打用炭火直接把肉烤熟&煙燻,難怪牛排送上來是飄著焦香、表皮酥脆。爬文看到餐廳是從美國引進全台第一座的木香烤爐,以白橡、 胡桃、櫻桃木三種柴火燻香,用台灣的龍眼炭續熱,要拿捏熱度、火候掌握的技術,絕對很不簡單,很喜歡保留著肉最簡單、最原始的味道。餐廳入口處是酒吧,映入眼簾的是挑高的天花,吊著一盞像昆蟲複眼、翅膀的彩燈,這裡光氣派就贏了不少高級餐廳了。餐點分好幾道:前菜、湯、主餐可選牛排或豬排、羊排及魚排,還有配菜、甜品及咖啡。我的前菜是半隻溫煮龍蝦 (套餐再加價$380),上碟已經剝殼 (非常適合我這種懶人吃),肉質新鮮緊緻,醬汁好吃得無法挑剔。我們點了燻牛蕃茄濃湯及燉牛尾清湯。一般餐廳的所謂蕃茄湯,大多是水水的清湯,教父牛排館的是蕃茄濃湯,湯是平平無奇,但一喝是非常驚豔的濃郁香氣,是用了90%的蕃茄,10%雞高湯調教而成,微酸中有一股煙燻的味道,把味蕾、味感全都叫醒了。牛尾清湯也很精彩,牛尾沒有半點肉臊味,切成小肉粒放在茶色的清湯當中,棒極了!很想再來一碗喔!麵包與沾醬送來,是橄欖油加香料,對這樣高級的餐廳送來的麵包是有一點失望,我是朋友圈中的麵包痴,通常我都會續加1-2次,但這一次,我們只吃了3片還剩一片。麵包是熱騰騰沒錯,但缺彈性、完全沒有外酥內軟,真是失望喔。朋友的配菜:羅勒炒蘑菇,青醬非常幽香,一大盤送來,算是給我一點安慰。我點的煎薯餅底部煎得香酥,中間夾著薯蓉、洋蔥,共4塊,這裡的配菜份量很多,足夠飽肚。主餐是美國頂級老饕牛排及7+和牛肋眼牛排。先送來熱的盤子,牛排是用鐵鍋子盛著上桌,鐵鍋內有一大球蒜頭,挖出來配肉吃,沾醬只有芥茉醬及法國鹽之花。牛排的邊邊有特別焦黑,切開肉色嫩紅,烤肉焦香飄來,從視覺、嗅覺、味覺都是頂極的享受,簡簡單單就很美味了。甜品是:「翻轉鳳梨蛋糕」及「香柚起司蛋糕佐香橙雪酪青蘋果慕斯」。外觀普通,最欣賞是突出的味感,前者雪糕加了松露,後者是佐紫蘇葉醬(綠色部份),都是充滿創意的搭配。餐廳的二樓,一邊是牛肉熟成室,全年保持- 2 度,每一天只取出當天份量使用,另一邊是酒窖,少說有4-500支酒喔。總體來說,「教父牛排」的服務生殷勤、專業,有問必答,我會推薦各位找機會來品嚐,享受木碳烤肉之簡單、原始的味道,不過,喜歡吃沙拉或多花招的話,就建議去晶華的Robin's Grill 。交通: 捷運文湖線劍南路站2號出口 …Read More
