Walking through the alleys surrounding Tainan’s Grand Matsu Temple of 300-year history, people are usually busy taking pictures of the cozy atmosphere of this ancient city. When turning into the corner of alley, one can follow the sweetened flavor of white gourd to the Liang Jiao Yin Melon Tea, the front door of which is stuck with interesting couplets, indicating guest are welcome to come and rest.

Founded in 1922, Liang Jiao Yin Melon Tea is an authentic ancient store of a hundred years. According to its third generation-Chen, Yung-He, former Liang Jiao Yin was the “Jin Lai Liang” on Zhongzhen Rd. While the trade mark right was not prevailed, the second generation changes to other business and did not register the name of Jin Lai Liang. In memory of the first generation who started the business by selling melon tea for 2 cents per cup, the store name was changed to Liang Jiao Yin (2 cent silver coin) instead.

Gradually melon tea has become a popular beverage to relive the summer heat for people in Tainan. At the golden age, there were more than 10 melon tea specialty stores in Tainan. However, as time went by, the second generation engaged in the emerging business of department store that sold imported goods on Zhongzhen Rd. The melon tea store was once shut down because of the rise of soft drinks and the hard works required for making melon tea.
Listening to the stories of melon tea production and history, Chen, Yung-He, the third generation took over the business of melon tea. He reopened the ancient stores of 40-year-old and readapted the melon tea to modern preference, from its sugar free edition to sweetened one, with continuous innovation.

The making of melon tea has inherited from old production method, which choose white gourds between 20~30kg from Xiluo Yunlin, Lucao Jiayi, Jiaxian Kaohsiung, peel and shred the white gourds before adding sugar and stewing it with ancestral secret of Chinese herbs for 8 hours to have the completely melted white gourds. The reason is that such species have thicker fibers and more suitable for stew. Liang Jiao Yin insists to follow the tradition to ensure the quality even the process is very time and labor consuming. The characteristics of Liang Jiao Yin Melon Tea is to increase variety of choices by differentiating texture and Sugariness.
