The first generation owner of Uncle Deng’s Dan Dan Noodles Shop, Deng Cheng-lin, was born in Sichuan and came to Taiwan with the Nationalist Government in 1949. He then ran his stand nearby Dongmen. With the hot and spicy taste, he satisfied many Taiwanese customers. Now many signature snacks are still sold at the shop including Dan Dan Noodles prepared with natural pepper and chili oil and sesame paste that give smooth and aromatic flavor; steamed ribs with flavored rice powder prepared with flavored rice powder and chili pepper paste to give a spicy flavor; and sour and spicy wanton noodles with ribs specially prepared with braised beef soup that goes with deep fried rib, a special way that gourmet lovers like.

Later, Mr. Deng gave the stand to the second generation owner, and here became a popular site of night snacks visited by many Taipei residents and stars. In 1991, the ownership was again shifted. The third generation owner paid great attention to shop decoration and dishes. But due to factors including fierce competition and soaring prices of materials, the shop was not in a good operating condition. The owner decided to introduce more modernized management methods.

 Preservation of authentic methods and shop


Now, Uncle Deng’s Dan Dan Noodles Shop was operated by the fourth generation. The wife of the owner, Wen Rong-zheng was a loyal customer of the shop. Introduced by his wife, Mr. Wen was also the fan of the shop. He gave big support and proposed many advices to shop management. The third generation owner thus invited Mr. Wen to become a shareholder due to his active managerial concepts.

After Mr. Wen took over the shop, the shop was managed as “a company” rather than “a stand.” POS system was introduce to systemize management of the shop. Active image commercial and marketing activities were also launched. Dishes at the restaurant continuously preserves the authentic taste but minor changes have been made. For example, customers like to have ribs cut thick, so Mr. Wen asked chef to change the cutting method and gave consumers thick and tender texture. Ramen was used to replace ordinary noodles to give a new feeling to customers. In the future, Mr. Wen plans to launch two new brands of “Yun Chuan Love” and “Pepper Shop” to attract new customers; loyal customers can also feel touched by the considerate services of this historical shop.

【賞味老舖】 Steamed sparerib with rice flour is the famous Sichuanese dish, which is served in a steamer basket with hot steams on top. It is marinated in rice flour and bean paste before steaming, usually with sweet potatoes in the bottom to make it light flavor. The spareribs are not greasy.
