想吃正宗關西風壽喜燒在台北也吃得到了!一直很愛東京今半跟京都三嶋亭的壽喜燒,現在在樂軒松板亭亦能品嚐得到。樂軒餐飲集團一直提供優質和牛給顧客,之前有吃過台中的樂軒和牛的烤肉,非常喜歡。來吃壽喜燒之前都沒有特地看評價甚麼的,因為知道一定好吃。Authentic Kensai style sukiyaki is now in Taipei too! I always love Kensai sukiyaki and now I can have it at Matsusaka Tei. Matsusaka Group is famous for their wagyu yakiniku, I have tried their yakiniku at Taichung and I like it a lot. 這裡的器皿好美!因為這裡的總監特地採購日本皇室御用的山田平安堂及香蘭社的漆器及瓷器,連烹調壽喜燒的鍋具都是特地從今半買的,食材當然要好,但連這部分都鉅細無違地準備好,可見對他們的壽喜燒很認真。先上漬物,最喜歡他們的泡菜,都可無限量添加的。

我吃的是日本A5羽下壽喜燒套餐,二人5800NT。

開胃前菜有這個炸牛排跟滷牛舌,酥香的炸牛排跟軟嫩入味的滷牛舌,佐以阿里山芥末、日本大蔥還有紫蘇鹽,能同時跟不同的調味一起吃。

主角登場了,A5和牛羽下,因油花輕柔細膩,肉質柔軟如羽毛而有此美名,是和牛的翼板肉肩胛部位。後面的是套餐內的蔬菜拼盤。

壽喜燒有分關東跟關西做法,關東地區是將醬油、酒、砂糖、味醂等調成醬汁 (割り下)放入鍋中煮沸,再加肉及蔬菜煮熟食用;關西風則是於加熱乾鍋撒上糖煎燒牛肉,再淋上薄薄一層醬汁調味。這裡用的糖是選用綿密細膩的和三盆糖,和三盆糖是砂糖中的極品,是製作日本高級和果子的珍貴材料,成本亦較一般砂糖高出許多,煮出來的甜度溫和適中,不會死甜。

把煮好的牛肉沾生雞蛋漿,牛肉的肉質果真輕柔細膩,油香肉香可口而不膩,配上越光米跟竹東茂林不催生土雞蛋,蛋漿的溫潤與鬆Q米飯配牛肉,好吃得不得了。

蔬菜拼盤有大蔥、洋蔥、金時地瓜、豆皮、板豆腐、紅蘿蔔跟蒟蒻絲,煮過牛肉的鍋子直接煮蔬菜,跟醬汁的味道亦很搭。

把煮過肉跟菜的鍋子直接煮蛋,加上細蔥,做成了這道玉子飯。熱騰騰的滑蛋飯濃縮了所有食材精華,蛋香米香醬香交融,是整頓壽喜燒的另一大驚喜。
