這家助仔牛肉湯是小高朋友極力推薦,他原來位於大菜市,因道路擴寬才搬遷至安平路,這家老店已經傳承60年之久,老闆說他每天凌晨3點與下午4點,都會親赴屠宰場取得新鮮溫體牛肉,嚴選牛肉適合的料理的部位,寧可買價格稍貴的牛肉,也不會讓客人吃到不好的肉。 除了嚴格挑選牛肉,美味高湯也是關鍵,老闆說首先放入洋蔥燉煮到金黃色湯頭,再放入鳳梨、苦瓜及白蘿蔔增加自然甘味,隨即再放入大骨、牛肚、牛舌、牛腩等慢火燉煮至香氣四溢,再燜上數小時即可。小高今天來就為了這鍋紅糟羹(沒吃過)。 是現宰台灣本土溫體牛肉。 自由時報有報導。 老闆說目前切的是牛里肌肉部位(請觀賞)。 炒高麗菜40元超值好吃。炒牛肉小高選芥藍菜120元。小高覺得這道炒牛肉,非常清爽好吃不是重口味,好吃有兼具健康令人激賞。牛肉湯(附白飯)100元,看到這牛肉湯的湯頭又要再激賞一次。牛里肌肉切成適當的薄片,放入高湯中輕涮後,吃的到高湯清爽香甜,及牛肉的鮮嫩超好吃。牛肉沾醬請自取。 這碗紅糟牛肉羹,牛肉經過摔打去筋增加咬勁,加入紅糟調味,微酸微甜的的滋味是小高第一次經驗好吃。 把紅糟湯淋上白飯也很下飯,這餐總共花費360元很超值。台南
