People of Yunlin used to engage in agricultural work and naturally they prefer salty food with stronger flavor. In early times, food served in Pine and bamboo house Japanese restaurant had strong flavor too. But as people put more emphasis on healthy food in modern times, the founder Ms. Zhang, Qiu-Yen, learning from masters who were taught by Japanese by chance, started to think of the change to the cuisine. In the first place, she changed the homemade sauce and dish up. She is also very strict in selecting ingredient, for example, red king crab must be imported from Japan even if it is costly. She thinks the quality can only be ensured by doing so, and selected ingredient can catch the appetite of connoisseurs. Unsurprisingly these changes did not reject by local residents but went popular instead.

It has been more than 20 years since she founded Pine and bamboo house Japanese restaurant in 1994. Ms. Zhang, Qiu-Yen says some customers have constantly visited for about 10 years. There are even some foreign customers who are on their business trip insisting to pay a visit to the restaurant before departure. She says they are very warmhearted, and it makes her more devoted to develop new dishes to surprise customers.

There are many chef’s specials, for example, raw clam vinegar made of the clams of Dongshi is very appetizing dipping with special sauce; Ice rolls are squid from Penghu which is hot boiled to well done on the boat and frozen immediately to lock up the freshness before being served. Plum juice yam tofu is purely handmade, and the flavor is light and fresh. Other than that, grilled chicken wings with cod roe and Gaozha are must-eat desserts, especially they are improved by Ms. Zhang, Qiu-Yen to keep the crispy and moist flavor.
