Hu, Guo-Xiung Retro Noodle shop, located in Ren Ai Rd, Puli County, is always lined up with customers who are envious of customers eating and sharing bountiful assorted side dishes in the restaurant.

Hu, Guo-Xiung’s Retro Noodle is traditional noodle soup. It is made of soup simmered for hours, bouncy noodles and a slice of pork fillet. The noodle is light and simple, yet embodies wisdom of cooking that pass on for a hundred of years. Tourists who visit Puli always want to visit the noodle shop to freshen up their memory of delicacy.

Fried tofu is chef’s special of Hu, Guo-Xiung Retro Noodle shop. Almost every guest gets themselves one dish of it.

“Chrysanthemum” meat is the meat on both sides of the cheeks and chins of the pig. It is less fatty and tastes chewy.

Hu, Guo-Xiung’s Retro Noodle was founded back in Showa period under Japanese rule, and was named “Gu Yue Xuan” then. Hu, Long-Hua, owner of the first generation, gained his reputation in Puli by its insistence on the ingredient and talent in cooking. Unfortunately he died in his early ages and the shop was inherited by the second generation Hu, Rui-Song. Inherited the father’s masterpiece, Hu couples used charcoals to cook, carried the noddle in the shoulder pole and sold it along the streets. Good taste soon got reputation locally. When Hu, Rui-Song grew older, his oldest son Hu, Guo-Xiung took over the business from the father and become the third generation of this noodle shop.

The invisible hero of Hu, Guo-Xiung Retro Noodle shop is Ms. Hu, who fought for the current business on her own.

Straw rain cape, old shoulder pole and old selling counter reminds of the nostalgia.


Hu, Guo-Xiung endeavored to work on R&D as soon as he took in charge. Ms. Hu says, over 90% of food provided are handmade upon order, including caramel for braised vegetable is fried with sugar. Spicy sauce is made of heart-shaped pepper; pork ball is made of pork with enough maturity. Pork skin, intestines, pork belly and pork tails that are parts of the whole pork set meals are bought and braised on the day to ensure the freshness.

As Puli has become the tourism hub in central Taiwan, many new and characteristic restaurant opened up, yet none of which affect the business of Hu Guo-Xiung Retro Noodle shop. While the fourth generation Hu Ren-Zhi took over the business, he executed the concept of cultural innovativeness to combine the retro noodle with Puli culture, and expand the cooperation with local stores to present the character of local old stores. Hu Guo-Xiung Retro Noodle shop will continue to thrive for centuries to become the living legend of Puli.
